Bethlehem Health Bureau Collaborates with Farmstand to create Bethle-YUM!

WLVR’s Brad Klein visits a farmers market with a unique twist. It’s on Bethlehem’s Payrow Plaza between City Hall and the Library, Tuesdays from 4 P.M. to 6 P.M.
Besides the usual selection of farm-fresh produce, the Bethlehem Health Bureau has created a program this year known as Bethle-YUM! Each week there’s a special vegetable product and if you buy that vegetable, you get a recipe that uses it, and a box of all the other ingredients needed.

Past examples have included recipes for Blueberry Vinaigrette, Carrot Top Pesto, and Cucumber Salad with Soy, Ginger and Garlic. This week’s special is Beet Greens on Pasta. Buy the Beets, and the Health Bureau supplies the rest. The program continues each Tuesday through October.
